This joint work has the purpose of developing knowledge on wild food plants and culinary herbs, focusing on the importance of its preservation for the continuity and innovation of some of the Alentejo’s most representative culinary traditions. The knowledge, memories and traditions based around these resources are reviewed, rekindling its Mediterranean cultural identity. In this respect, the conservation of the local biodiversity of these species is fundamental for the promotion and integrated development of the territory, and also for the preservation of material and immaterial culinary heritage.
